This qualification is delivered in class and is comprised of 22 Core units and 3 electives taking 15 months to complete.

This course will provide you with hands – on experience in areas from the preparation and cooking of meats, fish, fresh pasta, gnocchi, breads and desserts through cost effective menu development and working effectively in a team environment. Options are available for people for are already working in the Industry.

Classes are Wednesday weekly from 9am – 2.30pm.

This qualification reflects the role of commercial cooks who use a wide range of cookery skills. They use discretion and judgement and have a sound knowledge of kitchen operations. They work with some independence and under limited supervision and may provide operational advice and support to team members.

This qualification is suitable for an Australian Apprenticeship pathway

Pathways from the Qualification

After achieving SIT30812 Certificate III in Commercial Cookery, individuals could progress to SIT40412 Certificate IV in Commercial Cookery, SIT40612 Certificate IV in Catering Operations or SIT40712 Certificate IV in Patisserie.

CCAE does not offer the above qualifications.
